3 cans Mexi-corn, drained
1 cup mayo
2 cups sour cream
1 green onion, chopped
1 pound cheddar cheese, grated
1/2 tsp cayenne
1/2 tsp cumin
1 tsp salt
1 bunch cilantro leaves, chopped
juice and zest of one lime

Directions:
Directions:
Combine all ingredients in a bowl. Chill 3 to 4 hours or overnight.

Serve with Fritos or tortilla chips and Tabasco on the side.

If you want to lighten this up you can use fat free or low fat mayo and sour cream or substitute Greek yogurt for the sour cream.
