1 dozen eggs

Break 1 dozen eggs into a bowl. Add enough flour to make a very stiff dough. It will be hard to knead, so don't quit kneading too soon. If you do not get enough flour into the dough it will stick when you put it through the noodle machine. Once the dough is made let it rest at least 2 hours, the longer it rests the easier the dough will be to work with. Pinch of a small amount of dough off and begin rolling it through the noodle machine. You may have to roll it 2 or 3 times to get it thin enough. Hang the noodles on a rack to partially dry. Do not let them dry too much or they will just break up when putting them through the cutting roller on the noodle machine. Once they are cut into noodles, spread them out on a sheet to completely dry, then put them in bags. These noodles will keep for a very long time, as long as they are completely dry.
