1 ½ pounds beet
1 tablespoon horseradish
2 teaspoon caraway seed
½ cups wine vinegar
1 tablespoon sugar
½ teaspoon salt

Directions:
Directions:
Cook beets ½ hour or until tender. Rinse in cold water; slip off skins. Slice thinly. Sprinkle with horseradish and caraway seeds. Cook vinegar, sugar, and salt, stirring until sugar is dissolved. Pour over beets. Marinate at least 2 days in refrigerator.
