1 pound fish or other seafood cut in 1/3 inch thick x 1 inch pieces
1 teaspoon grated lime zest ( 1 lime)
1/2 cup lime juice (about 4 limes)
1/2 cup lemon juice ( about 4 lemons)
1 small green pepper, chopped fine
1 small red bell pepper, chopped fine
1 medium garlic clove, minced ( 1 teaspoon )
1 small jalepeno ( stemmed, seeded and minced ) optional
1/2 teaspoon salt

Directions:
Directions:
Stir lime juice,lemon juice, lime zest,red bell pepper, green pepper,(jalepeno,if using) garlic and 1/2 teaspoon salt together in a medium sized glass or metal bowl. Gently stir in fish, cover and let sit in fridge until fish is firm and opaque and appears cooked; for about 1 hour--stirring halfway through. Place mixture in a strainer,leaving a little wet and return to the bowl.
Gently stir in : 1/4 cup virgin olive oil
4 scallions or green onions sliced thin
3 Tablespoons minced, fresh cilantro leaves
1/2 teaspoon sugar
Let sit for about an hour ,then season with salt and pepper before serving.
