4-5 center cut pork chops
2 tbsp. of shortening
flour (used to coat porkchops)
salt/pepper
1 - seeded and diced jalapeņos
1/2 of an onion - diced
1 can Rotel Tomatoes
1 16oz can tomato sauce
1-2 tbsp. chili powder
3-4 medium size russet potatoes cut into bite size pieces
1 c. large elbow macaroni

Directions:
Directions:
Heat the shortening and saute jalapeņos and onions in a cast iron Dutch oven.
Salt and pepper the porkchops and then cut up the porkchops into bite size pieces.
Coat with the flour and brown with the mixture of jalapeņo and onions.
Once the porkchops are browned add the rotel tomatoes, tomato sauce and about 3 cups of water.
Cook over a low-medium heat for about 45-60 minutes, checking often and adding water when needed.
Add chili powder
Remember to stir and check often, add water when needed.
Add cut-up potatoes.
Cook until potatoes are close to being soft.
Add macaroni, again, stir and check often, add water when needed. The macaroni will take about 8-10 minutes to cook.
This is the time that you will need to stir, it likes to start sticking to the bottom.
