3/4-1 package tater tots
salt & pepper
1 lb. bacon, cooked & crumbled
1/2 red pepper
1/2 green pepper
1/2 large onion
8 eggs
2 c. milk
3 c. shredded Colby Jack cheese
Directions:
Directions:
Preheat oven to 400º. Layer tater tots in greased 9 x 13 pan & bake until golden. Fry bacon & crumble on top of tater tots. Saute' peppers & onion in small amount of bacon grease. Layer over bacon. Mix together eggs, milk, cheese & pour over all. Cover & bake 350º for 45 minutes. Uncover to brown slightly.
