3/4 cup white sugar
1/4 cup boiling water
1/4 teaspoon salt
1 egg white
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla
2 drops of peppermint flavoring

Directions:
Directions:
In a small kettle dissolve sugar in water. Make sure the sugar is completely dissolved. If it does not completely dissolve put it on the stove until it does. Let it cool to just barely warm .In a medium size bowl mix the rest of the ingredients together and begin beating ,all the while slowly adding the sugar mixture. Continue beating for 2 minutes or until the icing is light, fluffy and holds stiff peaks.
