2 cups 2% milk or unsweetened plain almond milk
2 tbsp. cornstarch
1 tsp.real vanilla
1 cinnamon stick
3 large egg yolks
1/4 cup plus 2 tbsp. sugar
fresh blueberries and raspberries (optional)

Preheat oven to 300F In a small bowl,mix 1/4 cup milk with cornstarch
In a medium saucepan, heat remaining milk, vanilla and cinnamon on med.
Cool,stirring frequently until steaming, 8 min. In a small bowl, whisk together egg yolks and 1/4 cup sugar until smooth.Set aside.
Give cornstarch mixture a stir and stir into warmed milk.Continue to heat until thickened and sauce coats back of a spoon. Allow to cool and discard cinnamon stick.Slowly pour warmed milk into egg mixture, stirring quickly. Pour rest into egg mixture and gently whisk.
Divide among 6 ramekins and place in 2 large shallow pans and pour in boiling water to half way up ramekins.
Bake 30-35 minutes, until edges are set but centres still wobble,cool ,cover and refrigerate. Before serving, transfer ramekins to baking sheet, sprinkle with remaining sugar and broil for 2-3 mins. Garnish with fruit if desired.
