3 1/2 cups flour
1 1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
3 cups sugar (I use a little less)
2 cups pumpkin puree or canned pumpkin
4 eggs, beaten
2/3 cup water
1 tsp. vanilla
1 cup warm melted shortening or butter

Preheat oven to 350º. Grease 2 large (9"x 5") or 3 medium (8" x 4") loaf pans. Mix dry ingredients together. Add wet ingredients and stir until combined. Pour into pans and bake for 1 hour or until a toothpick inserted comes out clean (mine usually take longer; just keep an eye on them). Cool in pans on a cooling rack.

The bread can be frozen. After it cools completely, wrap it well and place it in an airtight bag.

My college roommate's family often used a cookbook they had rescued from the garbage dump. It was aptly nicknamed "The Dump Book". This is one of the many tasty recipes from that found treasure!
