1 1/2 cups sugar
1/2 cup cornstarch
1 1/2 cups boiling water
3 lightly beaten egg yolks
1/2 cup lemon juice
1 Tablespoon grated lemon peel
3 Tablespoons butter
1 - 9" baked pie crust

Meringue
1 Tablespoon cornstarch
6 Tablespoons sugar
1/2 cup water
3 egg whites

Directions:
Directions:
Filling: Blend sugar and cornstarch. Stir in boiling water. Cook until mixture becomes translucent. Add a little mixture to the egg yolks a little at a time.Blend and cook until thick and even. Stir in juice, peel and butter. Pour into baked shell.

Meringue: Combine cornstarch,sugar and water. Cook until clear and cool slightly. Beat egg whites until soft peaks form. Pour in cooked syrup, a little at a time. After well blended continue beating on medium for 8 minutes. Pour on pie sealing the edges.( push meringue to the very edge of the pie crust )
Bake at 400º F for 3 to 5 minutes until golden brown.
