12 large peaches
12 sweet red peppers
4 hot red peppers
1 teaspoon salt
2 lemons
1 cup red wine vinegar
5 cups white sugar

Directions:
Directions:
Peel and chop peaches. Seed sweet red peppers and chop into smallish pieces (I use a food chopper for both peaches and peppers). Finely chop hot peppers. Mix together with salt and vinegar. Cut lemons in half and place upside down on top of mixture. Boil gently for 30 mins. Remove lemons, add sugar and continue boiling for another 30 mins or until desired thickness. (I've boiled the mixture for over an hour). Fill pre-sterilized mason jars.
Serve with chicken, turkey or pork. Also excellent as an appetizer served with crackers and cream cheese.

Experiment with hot peppers. I've used all sweet peppers. Another option is 1 hot red, 2 large hot banana, 4 jalepeno peppers.
