2 small skinless chicken breasts
1 cup carrots, diced and cooked until just soft
1/2 cup green peppers,diced
1 cup onions, diced
1 cup celery, diced
1 can bamboo shoots, chopped
1 can water chestnuts, chopped
1 can whole mushrooms, ( can use fresh mushrooms )
2 teaspoons sugar
1/2 cup chicken broth
salt
pepper
2 Tablespoons soya sauce
1 Tablespoon cornstarch mixed with cold water
1/2 cup blanched whole almonds coarsely chopped
whiskey (optional )

Directions:
Directions:
Cut chicken breasts into small chunks. Put 2 Tablespoons oil into a wok or frying pan,add the chicken and cook slightly,then add the peppers and mushrooms, add salt and a splash of whiskey(if using) and cook a few more minutes. Remove from pan and add a bit more oil to the pan. Add the carrots,celery, onions,water chestnuts ,bamboo sprouts and cook until tender. Add 2 teaspoons sugar, soya sauce and a splash of whiskey (if using)then put in the chicken broth and return the chicken, peppers and mushrooms along with the rest of the vegetables to the pan. Mix 1 Tablespoon cornstarch with 1/4 cup cold water and add toe the mixture to thicken. Put almonds on top and serve with rice.

This recipe came from a Chinese cook who used whiskey in all her recipes, but it tastes good without the whiskey. You can adjust the amounts of vegetables you may want to use,as there were no specific amounts given when I received this recipe. This is just a guideline on how much to use.
