1 lb. smoked sausage (or more)
1 lb. dry kidney beans
1 onion, chopped (1 cup)
2 scallions, chopped (green part)
2 stalks celery and leaves, chopped
1/2 small bell pepper, chopped
1 to 2 smoked ham hocks or cooked bacon
2 bay leaves
pinch of thyme
salt and pepper to taste
2 T. parsley

Wash and rinse beans. Add all other ingredients (except sausage) cover with water and bring to a boil. Turn to simmer, cover and cook 2-3 hours, stirring occasionally and watching your liquid level. Meanwhile, saute sliced sausage until most of the grease in rendered. Add to beans about 20 minutes before serving. Serve over fluffy white rice. For a nice garnish, put a slice of raw onion on top.

Our Dad should have been born down south. He loves southern food. He found this recipe and has been blessing us ever since. Always use fresh dry beans, which should cook up very creamy. Old beans will never truly cook right.
