Pancake Batter

4 eggs
1 cup milk
1 cup flour
pinch nutmeg
1/4 tsp salt

Filling

3-5 apples, peeled and sliced
2T butter
12 tsp. cornstarch
2 T. honey
1/2 tsp. cinnamon
(Or substitute a canned fruit filling)

Powdered sugar to top
1 T. melted Butter

Directions:
Directions:
Preheat oven to 375 degrees. Using whisk, combine eggs and milk, gradually add flour and salt. Butter the cast iron skillet, generously (2-3 T. butter) Place the buttered cast iron skillet in the oven, once hot, carefully remove from oven and pour batter into hot pan, place back in oven. Bake for approximately 15 minutes or until golden and puffy.

While pancake is baking, make the fruit filling. In a large saucepan over medium heat, melt butter, combine apples, cinnamon, honey, cornstarch and 3 T. water, cook until fruit has softened and is bubbly. (Or use canned fruit filling, warmed)

When pancake is done, remove from oven, place on serving platter, pour fruit topping into pancake and fold over. Drizzle with melted butter, sprinkle with powdered sugar, slice and serve!
