1 c. butter
2 c. sugar
2 c. light corn syrup
2 c. whipping cream, divided
2 tsp. vanilla extract

Combine butter, sugar, corn syrup, and 1 cup whipping cream in a large Dutch oven. Cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook, stirring occasionally, until candy thermometer registers 224º. Stir in remaining whipping cream; continue to cook mixture over medium heat to 244º. Remove from heat and stir in vanilla. (For a firmer caramel, heat to 245º or 246º.) Pour into a buttered 13x9x2 pan. Let cool about 5 hours. Cut into squares; wrap individual squares in waxed paper. One recipe makes about 120 pieces.

I prefer a softer caramel, so through trial and error I arrived at the 244 degrees. If you get them too firm, melt them and add a tablespoon of water or cream and reheat them to a lower temperature. If they are too soft, melt them and reheat to a higher temperature.
