- 3lb Pork Shoulder
- 2 onions
- 5 cloves garlic
- 1 bay leaf
- 3 c. Orange Juice
- 1 c. Mead (or white wine)
- Chicken/vegetable/beef broth
- Cilantro
- limes
- salt/pepper

Directions:
Directions:
In a pot, brown the pork on all sides. Pour in the orange juice, wine, and enough broth to cover the meat. Quarter one of the onions and add it, the garlic and bay leaf to the pot and bring to a boil.

Turn down the heat, cover, and let simmer for 2-1/2 hours.

After 2-1/2 hours, remove the cover and bring to a boil. Cook off all of the liquid. With two forks, carefully pull the pork apart and remove the bone from the pot (it should be very tender). As the liquid boils away, allow some of the pieces of pork to brown.

Condiments:
Chop the remaining onion and roughly chop cilantro (remove the large stems) and set in separate bowls. Also slice some lime wedges and place in another bowl.

To serve:
Place three small tortillas on a plate. Add a large spoonful of the Carnitas to each tortilla. Add condiments and your favorite salsa to taste
