8 slices white bread
8 eggs
2 cups milk
1 lb. bacon, crisp & crumbled
1 lb. grated cheddar cheese
1 4 oz. can diced green chiles
Salt
Pepper
Garlic Salt
Non Stick Cooking Spray
Optional Ingredients: crumbled sausage, artichokes, tomatoes, bell peppers.

Best when you make 1 day ahead!
Cook bacon til crispy. Set aside on paper towels to de-grease. Crumble when cool.
Cut off crust & cube bread slices. Set aside.
Lightly beat eggs and add milk.
Fold in bread cubes.
Add bacon, chiles and cheese.
Pour all into a 9 x 13 glass pyrex that has been sprayed with nonstick cooking spray. Refrigerate overnight. Bake at 350º for 1 hour - or until egg sets.
(you might have to cover with foil halfway through cooking if top is getting too brown)
