6 egg yolks
3 tablespoons sugar
1 lb mascarpone cheese
1 ½ cups strong espresso, cooled
2 teas. Dark rum
24 lady fingers
½ cup bittersweet chocolate shaving, for garnish
9 x 9 pan

In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes. Add mascarpone cheese and beat until smooth. Add 1 tablespoon of express and mix until thoroughly combined.

Add rum to cooled espresso.

In a 9 x 9 in baking dish, place the ladyfingers on the bottom. Drizzle coffee all over the ladyfingers, soaking them well.

Spread evenly ½ of the mascarpone mixture over the ladyfingers. Arrange another layer of ladyfingers and drizzle coffee again, all over them, soaking the well. Top with remaining ladyfingers.


For larger Tiramisu use 13 x 9 glass pan and double every thing else
Use 36 lady fingers (don’t need 48)
