1 3/4 cups flour
2/3 cup sugar
1 teaspoon baking power
11/2 tablespoons jimmies (optional)
1/2 cup shortening
3 eggs
2 teaspoons anise extract

Batter:
In a mixing bowl, add sugar, shortening and cream together. One at a time, add eggs, until blended. Add the anise extract and slowly add the dry ingredients until the mixture becomes creamy and smooth. Sprinkle the jimmies over the batter once you have ladled it onto the pizzelle maker (optional).

Using a ladle, pour enough of the batter to cover the design on each side of the pizzelle maker. Close the grill and cook until the pizzelles are golden. Test a few of them to determine the cooking time. This will depend on how hot your pizzelle maker gets. The approximate cook time per cookie is 15 seconds.

Variation:
The jimmies are optional; they are usually made without them. Lemon extract or vanilla can also used in place of the anise extract.
