Hermann is the cake of friendship whose origin is Alsace.

It is made with natural yeast based dough done in ten days.
The basic of this dough is either you receive it from a friend or you make it with the recipe below and after the ninth day at your turn you must share it with 3 friends.

Never put Hermann in the fridge, it is too chilly.
He also doesn't like drafts!
Never cover Hermann with a lid but with a clean cloth.
Hermann will breathe and he will be warm and grow.
You will need a large container (1.5 liters).

Here's how to prepare the basis of Hermann
1.5 cube of fresh yeast, prepare the cube by mixing with warm water, then stir in remaining ingredients mixed in the order given
200ml milk
125g flour
200g Sugar
1/2 cup warm water

Day 1: Either you start the chain with the recipe above, Or you receive Hermann from a friend with the liquid fermenting dough.

2nd and 3rd days: mix several times a day with a wooden spoon.

Day 4: Herman is hungry! Feed him with 1/4 liter of milk, 125 grams of flour, 200 grams of sugar.

5, 6, 7, 8th day: You mix again.

9th day: Hermann is still hungry.

Give him the same as the 4th day, and then you divide it into 4 equal parts, to give three shares to different people who in turn will continue to keep Hermann alive by continuing the chain of friendships.
Please do not forget to give them instructions how to take care for Hermann from the first to 9th day.
You can keep some for you.

10th day feed your part for the last time with: 250gr. flour, 200gr.sugar, 150gr. melt butter and half of an envelope of yeast and then you can put dry fruits, raisins, apricots, nuts to your choice

CAKE
1 apple
1 portion of 250gr. of Hermann
200g. dry fruits to your taste
250g. flour
1 coffee spoon yeast
1/2 coffee spoon salt
1 coffee spoon cinnamon
150gr sugar
10 tbsp vegetable oil
3 eggs

Put all dry ingredients in a bowl, add the eggs and oil and mix well.
Finish with the peeled and cut apple in small pieces.
Pour in a well greased cake pan and bake at 350°F. For 1½ hours
