2 Tbs. flour
1/2 cup sugar
1 tsp. cinnamon
1/4 cup butter or margarine

Crust: 4 cups flour
2 tsp. salt
1 cup shortening
2 tsp. baking powder
1 Tbs. sugar
7-8 Tbs. cold water

Cover peaches with water and simmer for 35 minutes. Combine 2 Tbs. flour, 1/2 cup sugar, and 1 tsp. cinnamon. Add to peaches and cook, stirring constantly, until mixture thickens. Remove from heat and blend in 1/4 cup butter or margarine. Cool.
Crust: Sift together flour, baking powder, salt and sugar. Cut in shortening with 2 knives or pastry blender until pieces are size of small peas. Add water and blend until good consistency for rolling. On floured board or pastry cloth, roll 1/8 in. thick and cut in rounds - 4 in. for small pies and 5 in. for larger ones. Add peaches. Fold over and pinch edges together to seal. Fry in 1 in. medium hot fat in large skillet. (Don't let fat get too hot.) Remove to drain on paper towel and sprinkle with sugar. These will freeze well.
