2 cups flour
1 1/3 cups sugar
1 teaspoon baking soda
1/2 cup walnuts (optional)
1/2 cup butter (1stick, softened)
1 cup roughly mashed ripe bananas (3 medium sized bananas)
2 eggs
1/2 cup milk


Directions:
Directions:
Cream the butter and sugar together until it is blended. Add the eggs and beat until smooth.
Combine the flour with the baking soda. Add the flour and milk into the egg, sugar, and butter mixture and blend until smooth. The consistency will be thick.

Fold in the mashed bananas (they should be lumpy so that small pieces of banana will remain in the cake). Pour in a greased and floured loaf pan. Place some whole walnuts on the top, and bake in a 350 degree oven for 40-50 minutes. Test it with a knife, it should come out dry.

Note: Walnuts can be folded into the batter before pouring it into the loaf pan. If you don’t like walnuts, or have an allergy to nuts, this cake is also very good without nuts.
