Makes 8 Jelly Glasses
8 eggs, well beaten
4 cups sugar
1 cup butter
Grated rind of 6 lemons (3/8 cup)
Juice of 6 lemons (1 cup)

Directions:
Directions:
1.Combine eggs and sugar in top of double boiler. Add butter, lemon rind and juice.
2.Cook over gently boiling water, stirring frequently until mixture thickens. Bottle and cover. Store in refrigerator.


Makes 2 9" pies. or Fill mini tart shells with lemon butter
Can be used between layers of a layer cake
