4 Cornish hens
Extra virgin olive oil
Salt and pepper
1 can condensed cream of chicken soup
2 tablespoons lemon juice
1 tablespoon herb de Provence
40 peeled garlic cloves (about 6 ounces)
Chopped fresh herbs for garnish (optional)

Directions:
Position a rack 4-6" from heat and preheat broiler. Line a baking sheet with foil.
Using sturdy kitchen scissors, cut backbones from hens. Cut hens in half through breastbones. Trim of excess skin and fat. Place hen halves on baking sheet and rub both sides with oil. Sprinkle both sides with salt and pepper. Turn hen halves skin side up and broil 8-10 minutes or until skin is golden and begins to crisp.
In a medium bowl, combine soup, lemon juice and herb de Provence.
Place 1/3 of the garlic in a 5-quart slow cooker. Add 4 hen halves, another 1/3 of the garlic, half of the soup mixture and remaining hen halves. Add remaining garlic and soup mixture.
Cover and cook on high for 3-5 hours.
Garnish with fresh herbs.
