1 cup warm water
2 teaspoons sugar
2 Tablespoons yeast
2 cups scalded milk--cooled
3/4 cup sugar
2 teaspoons salt
4 eggs, beaten
2 cups warm water
flour for a soft dough
CUSTARD:
4 cups whipping cream
6 beaten eggs
1 cup sugar
1/2 cup flour
vanilla to taste
CRUMBS:
2 cups flour
1 cup sugar
1 cup butter
FILLINGS: any pie filling of your choice, fresh fruits such as apples, peaches,apricots, plums,cherries,etc. that are sliced thin. and cottage cheese filling.
COTTAGE CHEESE FILLING:
mix dry cottage cheese with eggs ,sugar, salt and whipping cream to make a spreadable filling

For the dough: Soften 2 Tablespoons or 2 packages of yeast in 1 cup of water and 2 teaspoons sugar for about 10 minutes.Scald 2 cups of milk , then add 3/4 cup sugar and 2 teaspoon salt,cool to lukewarm, add 2 cups of warm water, the 4 eggs and the yeast mixture, mix well and add enough flour to make a soft dough (when the dough no longer sticks to your hands as you knead it).Let rise until double in size. Punch down and let rise again.Do not punch the dough down after it has risen the second time.
While the dough is rising prepare the custard ,crumbs and cottage cheese filling if you are using it.
To prepare the custard:Beat the 6 eggs,then add the 4 cups whipping cream,1 cup sugar ,1/2 cup flour and vanilla to taste. Set aside.
To prepare the crumbs :Mix the 2 cups flour, 1 cup sugar and the 1 cup butter until crumbs are formed. Set to the side.
Once the dough is ready, pinch off enough dough to roll out to fit an 8 or 9 inch pie plate. Roll out dough about 1/2 inch thick for 3 or 4 lightly greased pie plates, depending on how many pie plates will fit in your oven at one time. Once the dough is in the pie plates, put the filling of your choice over the dough(if you are using fresh fruit as a filling, put a light layer of flour or minute tapioca on the dough to absorb the excess moisture from the fruit ). Spoon some of the custard mixture over the filling, then put some of the crumbs over the custard Sprinkle with cinnamon. Bake in a 350º F oven for about 25 or 30 minutes or until the crust is a golden brown and the custard is set.
While the first ones are baking, prepare 3 or 4 more pie plates. This recipe will
make approximately 20 couga.
