1/4 c. flour
1/4 c. vegetable oil
2 tsp. ground cumin
2 tsp. chili powder
1 - 15 oz. can tomato sauce
1 - 15 oz. can water

Filling:
3/4 lb. shredded cheddar cheese
3/4 lb. shredded jack cheese
1 - 4 oz. can chopped olives
3-4 chopped green onions
1-1/2 lb. ground beef, browned and drained
1 pkg. (12) flour tortillas

Sauce:
In a 2 qt. saucepan, combine first 4 ingredients and blend well with wire whip. Add tomato sauce, stir and add water. Stir well and cook over medium heat 15-20 minutes, stirring occasionally.

Preheat oven to 350º.

Filling:
While sauce is cooking, brown ground beef well and drain grease.
In large bowl, shred cheeses and add chopped olives and green onions. Add drained and slightly cooled ground beef. Mix well.
In 9 x 13 dish dip tortillas in cooked sauce with tongs to soften. Place in pan with large spoonful of filling in center of tortilla. Roll up with folded side down to seal. Fill pan tightly to keep enchiladas from losing their filling. Pour remaining sauce over top of filled enchiladas. Garish with whole black olives if desired.

Bake 20 minutes or until cheese is bubbly. Do not overcook.
