6 lbs. ripe tomatoes, diced or chopped
1 small white onion, finely chopped
2 c. peppers (banana, bell, yellow or orange...any will do)
1 tsp. finely chopped garlic (fresh or jar)
2 tbs. finely chopped cilantro
1/2 tsp. black pepper
1/2 tsp. salt
2 tbs. sugar or sweetener
2 tbs. white vinegar or lemon juice
