5 lb. potatoes
1/2 lb. bacon
2 egg yolks
3/4 cup vinegar
1 cup water
1/2 tablespoon dry mustard
1 cup sugar
pinch salt
2 tablespoon flour
chopped onion

Directions:
Directions:
Cook potatoes with skin, peel, and dice. Fry bacon pieces, add onion and cook until tender, not brown. Mix egg yolks, water, vinegar, mustard, sugar, salt and flour. Cook until thick. Add bacon, onion and 2 tablespoon drippings. Pour over potatoes and mix lightly. Serve Hot.

A good German Potato Salad that has been passed down from the Zellhuber family. It can be heated in the oven if necessary. A favorite dish at our house when we serve fish.
