2 Tilapia filets
2 cups spinach (tightly packed)
1 lemon (zest and juice)
1 garlic clove minced
2 tsp. garlic powder
1/2 tsp. dried thyme or 1 tsp.fresh
kosher salt

Directions:
Directions:
Preheat oven to 375º. On two separate large sheets of foil, place two cups of spinach per foil. Season spinach with garlic powder and kosher salt. Season both sides of Tilapia fillets with garlic powder, thyme, and salt. Place a filet on top of the spinach pile, drizzling with 1 tsp. of extra virgin olive oil. Squeeze lemon juice and sprinkle lemon zest on top of each filet. Add minced garlic on top of each filet. Lift sides of foil and gather to close packet. Place packets on a baking sheet. Bake for 15 minutes or until fish is white and flaky. NOTE: Be careful opening packets as it will release steam.
