1 cup flour
1/4 cup sugar
1/2 cup butter, softened

Preheat oven to 350 degrees. Hand mix butter and sugar until thoroughly combined and sugar has dissolved. Add flour and form into ball. Split dough ball in half rolling out one half at a time (no added flour on roller) between two sheets of plastic wrap. Roll out dough to 1/4 inch thickness. Lift top plastic wrap and cut dough into squares. Poke each square lightly with fork and sprinkle with sugar. Place on cookie sheet and bake for 15-20 minutes or until lightly browned.

Every year for Christmas, my mother would make these cookies and it would be the first thing my brothers and I would think about. We would have breakfast, then eat the cookies before opening our stockings and presents. This recipe is very special, reminding me of a time when we were happy, safe and stable.
