2 cups sugar
1 cup softened butter
1 tbsp. grated lemon peel
1/4 cup fresh lemon juice
1 tsp vanilla
2 eggs
3 1/4 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cream of tartar

Directions:
Blend first 6 ingredients until smooth. Stir in flour, soda, salt and cream of tartar. Chill at least 1 hour. Roll into 1" balls and roll in sugar. Place 2" apart on greased cookie sheet. Bake at 325º F for 12 - 18 minutes or until very lightly golden brown. Cool for a minute on the cookie sheet then remove to wire rack to cool.

Makes 5 - 6 dozen. Roll in red and green sugar for Christmas or purple/pink for Easter. You can't eat just 1!
