1 baked pie crust.( 8 inch)
1 cup sugar
1/4 cup cornstarch
11/2 cup water
2 egg yolks, slightly beaten
2 tbsp. butter or margarine
1 tsp. lemon peel
1/3 cup lemon juice
2 drops yellow food colouring
2 egg whites
1/3 cup sugar

Directions:
Directions:
Mix sugar and cornstarch together in saucepan. Gradually stir in water.Cook over medium heat, stirring constantly until mixture thickens and boils.Slowly, stir about half of mixture into egg yolks. Blend back into hot mixture in pan. Boil and stir for 1 minute. Remove from heat and stir in margarine, lemon peel, juice and food colouring.Pour into shell and cover with meringue and bake until golden brown.
Meringue...Beat egg whites until peaks form. Slowly add white sugar and cream of tarter.
