GLAZE:
2 cups apricot preserves
2 teaspoons ginger
1/4 cup orange juice
1/4 cup prepared mustard
2 tablespoons soy sauce

ROAST:
2 (5-lb.) boneless pork loin roasts

Directions:
Directions:
In small bowl, combine all glaze ingredients; set aside.

Heat oven to 325ºF. Place roasts, fat side up, on rack in large shallow roasting or broiler pan. Insert meat thermometer in thickest part of 1 roast but not touching fat. Bake for about 2 1/2 hours or until meat thermometer register 160ºF, brushing frequently with glaze last 15 to 20 minutes of roasting. Remove to serving platter. Let stand 10 minutes before slicing. To serve pass remaining glaze with roast.
