4 pounds chicken
1 teaspoon salt
2 carrot cut into 1 inch pieces
3celery stalks cut into 1 inch pieces
1 onion cut into large pieces
2 chicken bouillon cubes
1/4 cup butter
1 cup flour
1 ounce sherry (optional)
1 Tablespoon lemon juice

DUMPLINGS:
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3 teaspoons shortening (lard or butter)
3/4 cup milk

Directions:
Directions:
Place chicken in a large kettle with 1 teaspoon salt; cover with water and bring to a boil. simmer until chicken is tender. Remove chicken from kettle and set aside. Add chopped celery, carrot and onion and simmer 30 minutes. Add chicken stock base and remove from heat. Strain and reserve stock. I also reserve the carrots, celery and onions and add them to the thickened sauce,
Melt butter in kettle and stir in 1 cup flour until mixture is smooth. Add strained , reserved chicken stock. Simmer 5 minutes . Add sherry (if using),lemon juice and salt and pepper to taste.

For the dumplings: Combine 1 1/2 cups flour,2 teaspoons baking powder and 1/4 teaspoon salt in mixing bowl.Cut in the shortening until mixture resembles meal. Stir in milk until just blended. Place about 1 inch of water in a saucepan with a wire rack that is about 2 yo 3 inches above the water line cover rack with parchment paper. With water gently simmering, drop dumplings by Tablespoon onto parchment paper leaving room in between for expansion. Steam 8 minutes uncovered then cover and steam for 7 minutes longer. Meanwhile remove skin and bones from chicken and cut into large pieces. Place chicken in a large casserole dish, arrange dumplings over chicken and cover with the sauce,and serve.

This dish takes a bit of time, but is well worth it. It is delicious . the steamed dumplings are a plus because they do not break up when served. Served with a side salad you have a meal fit for a king.
