approx. 1/4 c. all-purpose flour
3-4 c. milk (2% or skim is fine)
salt

Directions:
Drain all but 2 tbsp. fying oil from skillet in which you fried chicken, leaving all the browned bits. To the oil add flour and whisk together until clumpy, and all oil is absorbed. Turn skillet to 350º and gradually whisk in milk, blending constantly. Add salt and pepper to taste. Continue to blend until lumps dissolve and gravy thickens. If it becomes too thick, you can add more milk; if too thin, make a smooth paste of flour and water in a separate cup and add slowly to gravy. It will thicken as it heats. Adjust seasoning to taste and serve on rice or mashed potatoes.
