3 c. sifted all purpose flour
1 tsp. baking powder
1/2 tsp. salt
3/4 c. butter or regular margarine, softened
1 1/2 c. sugar
2 eggs
1 tsp. vanilla extract, or 1 T. grated lemon peel

Directions:
Directions:
Sift flour with baking powder and salt. Set aside.
In a large bowl, using a wooden spoon or spatula, mix together butter, sugar, eggs and vanilla. Beat with electric mixer on medium until light and fluffy.
Gradually stir in flour mixture until smooth and well combined.
Using rubber scrapper, form dough into a ball. Wrap in waxed paper or foil; refrigerate several hours or overnight.
Preheat oven to 375º F.
Using hands, form dough into balls 1 1/2 inches in diameter.
Place 2 inches apart on greased cookie sheets. Flatten with bottom of glass brushed with water, then dipped in sugar. Re-dip bottom of glass in sugar frequently.
Bake 10 minutes or until golden brown. Remove to wire rack and cool.
