1 (14 0z.) loaf day-old French bread
1 cup milk
3 eggs, beaten
2 1/2 teaspoon salt
1/3 cup finely chopped onions
1 tablespoon parsley
chopped ham or bacon (optional)
3 quarts salted water

Directions:
Directions:
Cut bread into very thin slices; soak in milk. Add eggs and salt; let stand 30 minutes. Add onion and parsley. Blend to an even consistency. In a large wide saucepan, bring salted water to a boil; reduce to a simmer. Shape dumplings with wet hands to about the size of a small egg. (If mixture is too soft, add some dry bread crumbs to it.) Drop dumplings into simmering water, being careful not to crowd dumplings. Cover and simmer for 10-15 minutes. Keep warm. Serve with meat and gravy.

Bread Dumplings a special served dish of the traditional German meal that Grandma (Mary) Eisenbarth often served her family for her wonderful Sunday dinners. This is a traditional food from her native German city of Munich.
