2 lb. bag of 6-8 ct. shrimp
3 sleeves of Ritz crackers, light salt
1 stick of butter + 1/2 stick to use later
1.finely chopped medium onion
1/2 finely chopped red pepper
2 minced or pressed garlic cloves
1/4 c. white wine
1/2 of large lemon squeezed
8-10 sprigs of fresh parsley, chopped

heat oven to 325º. Rinse the shrimp. Remove the shell up to the tail.Cut the shrimp up to the tail and spread on a sheet pan covered with parchment paper or foil.In a large bowl crumble Ritz crackers. In a saucepan, melt 1 stick of butter. Add the garlic, onions and pepper and cook just bit to soften the vegetables. Add the wine and cook just a minuet to cook off the alcohol. Add that whole mixture to the cracker crumbs. Add about a palm full of chopped parsley.Mix well and add the juice of the lemon..The mixture should be able to clump together with your hands. If it is too dry add a bit more wine until you can handle it easier. Melt the 1/2 stick of butter in the saucepan. Brush the shrimp with the butter. Clump the cracker filling in your hand and put a clump on each of the shrimp. Sprinkle the remainder of the butter over the shrimp. Bake approximately 20-25 min. until the shrimp is pink. Serve with a lemon wedge. Should give you approximately 4 shrimp per serving. Serves 4.
