Shepherd's Pie Recipe

5-6 potatoes
3 Tbsp butter
1/4 cup milk
1-2 lbs. ground beef
3 Tbsp flour
1 bag frozen vegetables or 2 cans vegetables
Cheddar cheese (grated) - about 4 ounces

Directions:

1. Peel 5-6 potatoes, chop up, place in a saucepan with water covering them. Turn heat up to high until it boils and then reduce heat to medium. Cook until potatoes are fork tender, drain, mash by hand or use a mixer and add butter, milk, salt & pepper (to taste).
2. Brown 1-2 lbs. ground beef in skillet, remove meat with slotted spoon and put in bottom of 9 x 13 casserole dish. Reserve drippings in pan.
3. Shake in jar with lid, or mix in a cup, 3 tablespoons of flour and ¼ cup of cold water until no lumps remain.
5. In the skillet with reserved drippings, pour in flour mixture, add a little salt & pepper; and cook until gravy thickens.
6. Pour gravy over meat in casserole dish.
7. Spread 1 bag of frozen vegetables (cooked) or 2 cans of vegetables (drained) evenly over gravy mixture (I use kitchen sliced green beans).
8. Spread mashed potatoes over top.
9. Sprinkle with grated cheddar cheese.
10. Bake at 350 degrees for approx. 20 - 30 minutes, or until bubbly and cheese melts and begins to brown.

This is the first meal I cooked for Rick after we married. A lady at work shared it with me and I have made it ever since. It is easy, and makes great leftovers!
