1 lb. butter, softened
1 1/2 c. sugar
5 c. flour
3 egg yolks, hard boiled
1 lemon rind, grated and juice
1 raw egg white

Directions:
Directions:
Mix flour and sugar, rub together like pie crust. Add remainder of ingredients; four, egg yom, lemon rind and juice. Refrigerate overnight. Roll out dough to 1/8 thick and cut out with your favorite Christmas cookie cutters. Brush on whisked raw egg white. Decorate with sprinkles of coarse, colored sugar or mixture of ground walnut and sugar. Bake 350 degree oven for about 10 minutes or until edges become lightly browned.

Gram left the cookies "dry out" on the counter top overnight to let the moisture out. Then she lined a cookie tin in foil and loaded 'em up and keep them cool in the garage until Christmas.

These are the Christmas Cookies Grandma Dumelle made that everyone loved. Light lemon flavored cookies topped with egg whites and coarse colored sugar. I remember Gram's old cookie cutters; the chicken, the crescent moon and Santa. Every Christmas I make these cookies but they'll never taste quite as good as Gram's!
