1 onion, chopped
1 1/2 c. celery, chopped
1 tsp.. slat
1/2 tsp.. garlic
1 lb. soaked lentil beans
1/2 c. catsup
2 lbs. pork roast or pork butt
2 qt.. water
pepper to taste

Simmer all ingredients, except catsup for 5 hours. Add catsup and stir before serving.

This recipe was taken from a cookbook called "Soup to Nuts" that my mother in-law Dorothy Kristmann helped put together for bean She Park Ridge Woman's Club. At the time she was president of the club. Hope's Bean Soup was submitted by Wanda Petkus, this was a Kristmann family favorite (and a well worn page from that cookbook!).
