1 c butter or margarine, softened at room temperature
2 cups brown sugar
2 eggs
2 tsp pure Mexican or Bourbon vanilla
2 1/2 c flour
1 tsp baking soda
1 scant tsp salt
3 c quick cooking rolled oats
Filling:
12 oz milk chocolate chips
2 T butter or margarine
1 c (or one 14 oz can) sweetened condensed milk
1/4 tsp salt
2 tsp pure Mexican or Bourbon vanilla
1 cup chopped walnuts or pecans, optional

Directions:Prepare dough by creaming together butter and sugar. Mix in eggs and vanilla. Stir in flour, soda, and salt. Add rolled oats a cup at a time. Dough should be the consistency of oatmeal cookie dough. Spread 2/3 of the dough in a greased 9 x 13 pan. Set remaining dough aside while you make the filling.
For the filling, in a saucepan or double boiler, mix together chocolate, sweetened condensed milk, butter, and salt. Stir constantly over medium to medium-low heat until completely melted and very smooth. Remove from heat and add vanilla. Add nuts if desired. Pour filling over dough and spread evenly.
Take remaining dough and flatten into pieces and lay on top of the filling. It should mostly, but not completely, cover the filling. There will be spots of filling showing through. Bake at 350º for 25-30 minutes or until lightly browned on top. Cool in pan and then cut into bars. (I put in fridge or very cool place until filling is completely set before cutting.) |
