8 ounces pasta (any shape)
2 T. butter
1 medium onion diced
1 green bell pepper diced
10-ounce rotel
8 ounces Velveta cheese
3 cups cooked and chopped chicken
1 can cream of chicken soup
1/2 c. sour cream
1tsp. chili powder
1/2 tsp. cumin
1 1/2 cups shredded cheddar cheese

Directions:

Preheat oven to 350. Cook pasta and drain. Melt the butter and add onion and bell pepper and sauté for 5 minutes or until tender. Stir in Rotel and Veeleta. Cook stirring constantly until cheese melts. Stir in the chicken, soup, sour cream, chili powder, and cumin. Add the cooked pasta and mix until blended. Spoon the mixture into a greased 10-inch cast iron skillet or a 7x11 baking dish. Top with shredded cheddar cheese. Bake for 30 minutes or until bubbly.
