1/4 cup corn starch
1 cup sugar
1 1/2 cup water
3 eggs separated
grated peel of 1 lemon
1/4 cup lemon juice
1 tbsp. butter

Meringue:
3 egg whites
1/3 cup sugar

Directions:
Directions:
Combine cornstarch and sugar. Put water in a glass bowl. Microwave until hot add sugar mixture microwave 2 minutes, stir , 2 minutes, stir, etc. until it is thickened. Add a small amount to beaten yolks to temper the yolks so they don't cook solid stirring constantly. Then pour yolk mixture back into sugar mixture. Heat until bubbly, mix in peel, lemon juice, and butter. Pour over pie crust (I use graham crusts sometimes)

Beat egg whites until foamy. 1 tsp. at a time add sugar until all is used beating constantly until mixture stands in peaks. Mound on top of hot filling in pie crust being sure the whites touch the crust edge, so meringue doesn't shrink. Bake at 350º 15 - 20 minutes. Watch carefully for meringue to brown.
