3/4 c. olive oil
3 T. garlic, minced
4-1/2 tsp. ground cumin
1-1/2 tsp. cayenne pepper
1-1/2 tsp. cinnamon
Salt and pepper to taste
3 lbs. pork tenderloins

Directions:
Directions:
Combine oil, garlic, cumin, cayenne, and cinnamon, salt and pepper in bowl. Rub over pork. Cover pork, refrigerate at least 4 hours or overnight.

Heat large nonstick skillet over high heat (or add a little oil in a regular pan). Add pork to skillet in batches and brown on all sides, about 5 minutes per batch. Transfer pork to large baking pan and bake for 15-20 minutes in a 400 F. oven.
