4 Artichokes
2 Lemons (Halved to make a total of 4 pieces, one for each artichoke)
4 cloves Garlic (whole)
Olive Oil
Sea Salt

Directions:
Trim artichoke starting with the stem (about 1/2" from bottom leafs), cutting off the top 1/4 of leaves, finishing by trimming the sharp points off the remaining outer leafs. Rub all trimmed parts with one of the lemon halves to keep from discoloring. Next slightly open the center of the artichoke and inserting one clove of garlic deep into the center. Pour a generous amount of olive oil into artichoke through the cut top, and sprinkle with generous amount of salt. Squeeze remaining juice from lemon half all over and inside of the artichoke. Double wrap in foil and roast, either in the oven or on the grill at 400º for 1 hour 20 minutes.
