4 lbs bone in, skin on Chicken (Thighs work best).
1 t. Salt
2-4 T. Lard
2 Medium Onions (Halved and sliced)
2-3 Cloves Garlic (Chopped)
4 T, Sweet Paprika
2 C Chicken Broth
6 Medium Yellow Potatoes (Waxy potatoes, pealed and cut into 8th's)
Chopped Fresh parsley
Cooked Egg Noodles

Rinse chicken, pat dry and sprinkle with salt. Heat 2 T lard in large Dutch oven over medium heat and cook onions until soft and golden (about 10 minutes). Add garlic and cook an additional minute. Transfer to bowl.

Add more lard and cook until chicken is nicely browned on all sides (about 10 minutes). Sprinkle with paprika, and add onions and broth. Stir well and cover tightly. Simmer over low heat for 30 minutes. Add potatoes and cook until tender (15-30 minutes). If pan juices are too thin, transfer chicken and potatoes to a bowl and boil pan juices until reduced to a thicker sauce. Serve over egg noodles. Sprinkle with fresh parsley.
