1 lbs Dried Cannellini Beans
4-6 links Adell's sausage (I prefer sun dried tomato sausage, but any will do)
2-3 t Olive Oil
2 Small Onions (chopped)
1 T Minced Garlic
2 T Sun Dried Tomatoes
1 Can Italian Stewed Tomatoes
1 t Oregano
1/2 t Marjoram
2 C Chicken Broth
Salt
Pepper

1/4 C Fresh Basil
1 T Balsamic Vinegar

In a 4 quart pot, bring 10 C of water to a boil, add beans, cover and cook for two minutes, Turn off heat and let stand 1 1/2 hours. Drain beans, and return to pot. Add water and gently simmer for 2 more hours, or until beans are tender but not mushy.

Cut sausage lengthwise and then cut into 1/4 inch "half moon" shaped pieces. In a stock pot, add 1 t olive oil and brown sausage, remove and saute onion until translucent, then add sun dried tomatoes and garlic and saute an additional minute. Add stewed tomatoes, oregano and marjoram and chicken stock to pot and heat to a simmer. Add meat and drained beans and simmer 30 minutes. At the end, add basil and balsamic. Serve in bowls with a little basil and Parmesan sprinkled on top.
