1 lbs Dried Navy Beans
1 Medium Onion
4 Whole Cloves
8 oz Slab of Bacon or Salt Pork, Trimmed and cut into 1/2 inch cubes
1/4 C plus 2 T Maple Syrup
1/4 C Un-Sulfered Molasses
2 t Dried Mustard
1/2 C Ketchup
1 T Cider Vinegar
1 T Dark Rhum
Salt and Pepper to taste.

Bring 10 cups of water to a boil in a 4 quart pot over high heat. Cook beans covered for two minutes, then turn off heat and let stand covered for 1 1/2 hours, then drain.

Heat oven to 250º. In a 4 quart Dutch oven, add beans, bacon, syrup, molasses, dry mustard and three cups boiling water, stir to combine. Stud the onion with the cloves and place in center of the pot with beans. Cover and place in oven for three hours. Stir occasionally.

After three hours, add ketchup and vinegar, keep covered and return to oven, stirring occasionally until beans are tender and liquid turns to a thin glaze, about three more hours.
