2 cups plus 1 Tbsp. all-purpose flour divided
1/2 cup powdered sugar, plus extra for garnish.
3/4 tsp. salt, divided
1 cup (2 sticks) UNSALTED butter, chilled
1 can (14 oz) sweetened condensed milk
4 eggs
3/4 cup fresh lemon juice
1 tsp. baking powder
1 Tbsp. grated lemon zest
raspberries and fresh mint sprigs for garnish

Directions:

Heat oven to 350º. Line 13 x 9 inch baking sheet with foil or parchment paper. In medium bowl combine 2 cups flour, powdered sugar and 1/2 tsp. salt. With pastry blender (or two knives), cut in butter until mixture resembles coarse crumbs. Pat into baking pan. Bake crust until pale golden, about 20 minutes.

With electric mixer, beat condensed milk and eggs in a medium bowl. Add lemon juice, remaining l Tble. flour, baking powder, remaining salt and lemon zest. Pour over crust.

Bake 20-25 minutes or until just set in center. Cool in pan on wire rack. Cut into bars; sprinkle with powdered sugar. Garnish with raspberries and mint.

If you like lemon, these are to die for! One note of caution--Fresh raspberries will get moldy if left at room temperature for any length of time. I would either not use them or put on just before serving.
